On the brakes:
Just pop off the bottom and top ball joints, take spindle, rotor, caliper and all. Take the proportioning valve and master cylinder (you'll need it for a core to get a new one).
You won't need a brake pedal assembly.
On the rear end.....I really doubt that it is a 9". No factory Mavs came with a 9". My quess is that it is an 8", which is still better than you 7.5".
