I have a '72 with a 351w and it's been wedged in (the work was done before I bought it). I wouldn't try a 351c because it's a wider block... unless you want to do some cutting and welding, etc... If you already have a 302, it wouldn't take much to make it a competitive vehicle on the street due to its lightweight. A quick example would be an RPM intake, 268 COMP Cam, and headers and it be a stormer! A plus would be having a 3.50 gear to replace the 3.00 or 2.79 and there would be few factory cars if any that could run with you.
