Just want to make sure you are talking about the header to block gasket and not the collector gasket...if so, copper is the way to go!!! Out west here the chain store Baxter autoparts sells them....I think most performance places do.... As for the reason studs are preferencial to bolts, I find it is easier to put things on like oil pans, tranny pans,valve covers etc. and keep the gasket from sliding during install, never tried it with headers though....hmmmm.
