I've had the same thing happen on a number of different vehicles, and it's usually because the oil is low. Is it using that much? I had a '94 Isuzu Trooper (new) that I discovered used quite a lot of oil between oil changes because the oil light started coming on around curves and with hard braking. I just had to check it frequently to prevent causing damage. It seems to me if it was your oil pump, it would be more consistent than it is.
