A 180 degree thermostat ought to keep your car running at the right temp. If your cap has a crack in it, your car will overheat. Also, if you remove the cap after the engine is warm and then put it back on, it will overheat.
I installed a fan shroud from a 67 Mustang (I had a 302 with a 1969 water pump)which fit perfectly after modifying the mounting holes slightly. I got my dimensions right by measuring up my radiator and then going to a Ford parts dealer and looking up the dimensions of the available shrouds. The shroud dropped the temperature of my engine about 10 degrees.
