Sounds much like low fuel level. It could be the fuel pump not suppling enough fuel above idle.
Could be a gasket swelled limiting the float movement.
I would get a gasket set then take it apart enough to be able to blow every area out with air.
Upon assembly make sure that the float level is correct. If a holly that has the sight plugs in
the bowls, the level is adjustable from the out side till the fuel just starts to come out of
the plug hole with engine running.
If you make this kind of adjustment please be aware of the fire hazzard present from the fuel
getting on a hot manifold or from a spark.
Your problem in not really difficult. It just takes persuit of each area and you will get the problem.
It could even be water in the fuel.
