First you need some definitions. A short block assembly is generally considered to be an engine block with cam, crank,piston-rod assembly and timming chain and gear and some times the oil pump. You then must supply pan,heads,intake,front cover,water pump and all other supporting parts. Long block is the short block assembly plus the heads complete,front timing cover,and oil pump. You again supply the rest of the parts. Replacing the 250 involves,motor mounts,V8 radiator, exhust and some other items to support the V8 and the front springs should be changed to V8 springs as the 6 is a lighter engine. Suggest you get all the suporting parts from a V8 car and also consider buying a short or long block. Short block prices in my area are about 750, long is about 900.Hope this helps. Happy new year.
