Your 200 six springs are sagging under the extra weight of the 351 besides being aged. I would just return the ride height back to the original position and install a heavier front roll bar and 4 leaf springs in the rear. Then adjust the rear ride height with shims between the springs and the rear housing.
I believe coil springs are rated in 100 lbs./inch of compression. If they can look up the original spring rate for the 6 then figure the extra weight it should come close.
I agree with Creig not to raise the front. At speed!!! air gets under the car to much and you begin to feel light, not a good feeling. Also consider stiffer operating shocks or even adjustables.
Keep the physics and relationships of this in mind and it will come out good.
