The speedo cable has a flat tab on one side of the (usually white) coupling that attaches it to the back of the instrument panel. If you squeeze that flat tab in and gently pull, the speedo cable should come right out. I couldn't figure out how to get the one off out of my parts car, so I broke it. I made sure to get it right before I tried it on my "project" car.
As far as the wiper motor is concerned, it's pretty straightforward, but a pain in the ass to get to (as you've figured out). When you replace the motor you might want to replace the linkage bushings. You can buy generic ones at Advance (pretty sure) or Auto Zone (I think). They will make the wipers move more smoothly.
