I've seen it done on various Mustangs when doing and EFI conversion. There were just a few changes: electric fuel pump, return line, inertia safety switch and other misc wiring. They should be as reliable as any modern setup. The only thing I can think of being concerned with if not going EFI is the fuel pressure. I was considering wiring up a electric FP as an extra security measure (by using a hidden kill switch wired to it). But never got around to it.
You might want to check out windsor-fox or Ron Morris' performance.
