Along with giving lots of thought to RR's questions, the biggest enemy in trying to restore any car is rust. Mavericks are prone to rust under the front fenters along the top aprons, in the air inlets under the cowl, floor boards & behind the rear wheels. Out of all these areas, the cowl is the hardest to fix. If you can cut, weld & do at least roughed in body work, then your half way there. There isnt much sheet metal available but alot of mustang metal can be modified to work. Interior parts are the next obstacle. Most decent upholstry shops are expensive (at least in this area). The more you can do, the cheaper it is. The mechanical stuff is the easiest. I put together a really nice Maverick from 2 junkers. With me doing all the work except the seat upholstry, I still sunk just under $6000. Let us know what area your in & maybe you'll be lucky enough to have a Mav nut near by.
