Your probably looking to drive it on the street I guess. If yes then a good cam is ISKY stay away from comp cams. I have seen about 20 in the last year that have had problems. Most of them had a lobe wear off because it wasn't hardened. Isky has never failed me.
If your streeting and want a little gas milage, you want about a 232 @ 50 duration. The more lift the more power but also the less milage and more trouble with emmissions. I am in CO so that makes a huge difference. If you have a good intake and a good exhaust system along with the rest of your stuff, you will be okay.
There are dual profile cams that would work well with your setup. The problem you have is the torque converter. I think that your best bet is one of the dual profiles with a shorter duration intake and about a 232 exhaust. For your torque converter this would be about the max I would go for.

what exhaust
is the engine a rebuild or are you just changing the cam
what kind of pistons and compression are you running
what carb are you running and how many cfm
any thing else you think might make a difference.
The runners on a 351 Cleavland are huge so the bottleneck is the intake and the carb and then the cam then the exhaust. They are a mean engine.
