I had a Wieand tunnel ram on top of a flat top 289 with a hyd. cam (about .515 lift) and two 450 holleys. I was totally satisfied with the drivability. It was a 4 speed car which may have something to do with it. The 450 carbs have mechanical secondaries so you don't have to be bothered with that vacuum crap. Tunnel rams rock and I highly recommend them!! One thing that you will find is that people that don't like tunnel rams have never owned one. All they know is that a friend of a friend of a friend had problems with theirs and thats good enough for them. Two fours ridin' high is a beautiful thing!! Go for it!!!
