The asprin trick is to put 2 asprin (or break one in half) in the thermostat. Force the therostat open and gently let it close on the asprin. This will hold the thermostat open while you fill the cooling system and the air will self bleed on start up. The asprin will disolve and the thermostat will work as intended.
The hole trick works to but is not as fast and easy. Just remember to use a small hole, you only need enough to bleed the air on initial start up.

    Frank ... I have the same setup ... roller motor ... carb ... 180 T-stat .... and my gauge never goes above 180/185 ...

You can also buy a Thermostat with a integrated bleeder valve.
I use a tool that pulls a vacuum on the system by using shop air. Allows you to check for leaks before you install coolant. After your satisfied there are no leaks you drop a hose in the coolant jug and flip a lever and the vacuum inside the cooling system draws the coolant in and prevents air locks.

most of the dodge/chrysler t-stats have an integrated 'hole' in them, but i think they're all 195*

Well, my new T-stat came with an air bleeder hole already in it, so I see no point in drilling one...

I honestly have never had a problem with air on windsor fords. Other applications, yes, but not windsor fords.
