I recently got a great deal on 2 n.o.s. door skins. My doors don't have any perforations, but are pretty badly pitted. Is it really hard to do a good job of putting new door skins on? Would it cost me a ton to have it done? Any opinions on whether to fix the original skins or replace with the new?
Thanks in advance for your inputs.

Its a fairly easy job for a person with some bodywork skills. It is probably not a good place to start learning you could mess up the new skins. If you do reskin any rust issues on pinch weld of door bottom can be dealt with and you will basically have new doors.
If you took the stripped doors to a shop I would expect to pay around 5 hours labor per door to install skins

If you decide to do the skins yourself...
Treat/eliminate any rust you find on the inner doors edge.
Seal the inner door edge with an epoxy type paint.
Buy a proper seam sealer to apply to the door edge before you roll the skins edge.
If you dont do the above properly...The door WILL rust at the seam.
    Buy a door skin roller.

Do some research on how to install a skin and roll the edge.
If you use a hammer and dolly...Use a good hammer and a good flat dolly. Dont use harbor freight cheapies for this process.
Position and clamp the skin to the door properly and securely. If it moves while you are setting the skin...Your done...It helps to put a small tack weld in the upper corners once the skin is properly positioned.
If you work slowly and carefully you can do it without messing it up. You have to be careful to not distort the skin while rolling the edge. Theres a bit more to it so do some research before starting. Good luck...
