I have a 65 and I want to swap in a 5.0 efi set up. I know I need the motor and computer and the wiring harness, but do I need everything that connects to the wiring harness or can I leave stuff behind? Also, if I kept my gas tank and just put an inline fuel pump, would that be enough fuel or do I need the mustang's in-tank pump? I'm still just planning so any thoughts are appreciated.

You will need the fuel pump to handle the high pressure demands of the EFI system.
The easiest way is to use the in-tank pump from your donor car.
