So, get a 8' rearend out of another Mav, 5lug axles, better strengh, and use a Detriot Locker carrier with 3.50 Gears. Thereason 3.50 gears, best all around ratio. You're also not after gas mileage I suspect to, 8" is more then strong enough with the right parts. And a 9" is to big and heavy for your needs.
Now for speed vurse rpms, 26" tire, 3.40 gears, 2700 rpms =62mph, 80mph=3560rpms,
26'tires x 2.79gears x 2700rpms = 74mphs, all this is from my handy dandy Mark Williams Ent. gear ratio cumputer. If anyone wants the formula I have that to for figuring out rpms, speed etc.
3.50 X 65mph X 26"tires = 2975rpms
3.50 X 65mph X 28"tires = 2760rpms
3.25 X 65mph X 26"tires = 2760rpms
3.50 X 100mph X 26"tires = 4575rpms clear as mud, right.

I have 2.79 behind my 302 with C4 and 26in. tires and 2700rpm is about 75mph with 3.40's you will be lucky to get 60pmh at 2700rpm, and 80mph will be more like 3700rpm. That is why I am waiting until I get my T-5 in before I switch to 3.55's.

: : Here is what I have come up with. I'm gonna put my 3.40 in, which with a 26 inch tall tire, I should be running 2700 rpm at 80 mph. The speedometer will be off, until I can find the drive gear for the speedometer. Good luck....
