Willy,if there is a 302 cast into the block then it was originally built as a 302 size engine. The heads could have been changed at anytime as they are fully interchangable. The block (can) also be built to the smaller 289 size by using a 289 crankshaft,rods and pistons.
The stroke is 3 inch for the 302 and best measured from the top of the block with the pistons and crank still in place. Its a matter of how far the piston goes down the bore from its most upward position.
Ford had many different head chamber shapes through the years and a few different valve sizes along with some different piston demensions and two block deck heights.
There can be some considerations when assembling an engine from mixed parts as you can see.
