I'd go with a late model 5.0L HO, 85-up. These are roller motors that are much more efficient than the early 302s. They are balanced differently and have lighter internals than early 302s, but still can withstand a lot of power.

Really any 302 installs the same, except for your balancer problem (you'll need a new flywheel, but you'd need one anyway). The late model 302 lets you run a roller cam without having to buy a set of roller lifters, so you are open to all the Crane and Ford racing cams for the 5.0L.
With the same mods, you'll get better MPG and a little more power out of a 85-up Mustang Ho motor than you'd get with any other 302 ('cept Boss). -CP
