Hey all i have a problem with overheating!!!!!!!!

my 72 maverick grabber has been on the road since early april at which time i had no problems with overheating i didn't up untill oh say late june and i had been driving in 80 and 90 degree weather since. i cant find out why it still wants to over heat... i have done the following... new radiator,semi new water pump (been on since february) new radiator cap,with pressure release, i just put a new edelbrock 600cfm carb on it, i took care of all vacuum leaks checked all,checked upper and lower hoses to see if they were callapsing in on themselves at 2500rpm, flushed out engine and radiator, new thermostat (went thru 3) trying to play with it to get it to stop, i know the water pump cant be bad cause it flows too much water,(in which case might be my problem cause it is flowing so fast it is not having a chance to cool down.) so i put a big washer with a 3/8" hole to restrict water flow...now she normally doesnt get over 160 to 170 degrees, that was all and dandy untill i made a trip about 50 miles and she got hot!!! anybody else having problems and if so how do i fix it? what am i missing ? it's probably a simple one but i have overlooked it so any help would be greatly greatly appreciated!!!!!!!! thanx so much
