    Seems to me a guy at an autoparts store should be talking up a thermostat for a sale, unless he's not a parts pro, and just a backyard mechanic... either way, don't do it.. it's there for a reason. When you are driving, and the wind is going through the radiator, the coolant thats kept in the radiator by the thermostat being closed gets cooled down from the wind, and provides your cooling effect when the t stat is opened. When you run one without a t stat, it doesnt give it a chance to stay in the radiator to "cool down"... most people run no t stat in a pinch until they can get one, or generally in the winter... theres a huge debate as always about which is better... just like a chevy vs. ford, you know which one is better, just use one. lmao...
