Fan shroud is irrelevent at anything above 30mph. I assume your water pump is flowing properly. One test is to take a thermostat, cut out the center section and install the plate in the housing. If you still are running hot, your radiator isn't flowing properly or you have a pump problem. (You can't just remove the stat, because water just goes through too fast.)
Also, is your temp sender in the stock location? Regardless, your running way too hot.
